Honey over sugar

Bartenders generally credit the drink to Milk & Honey in New York around the turn of the 2000s, a room whose house habit of building sours from three ingredients produced a lot of durable recipes. Whatever the paperwork says, the logic is obvious the moment you taste it. Bourbon and honey share a caramel register that gin and honey never quite reach.

Make the syrup three parts honey to one part hot water and keep it refrigerated; it holds for about a month before it starts to ferment. A 1:1 syrup pours more easily but you need more of it, which waters down the whiskey. Orange blossom honey suits bourbon particularly well.

How is this different from a Whiskey Sour?

Honey instead of sugar syrup, and no egg white. That sounds minor until you taste it. Honey carries its own floral, faintly waxy flavor that sits right on top of bourbon's vanilla, where plain syrup only makes the drink sweeter without adding anything.

What bourbon holds up best here?

Something at 45% ABV or above. At 40% the lemon and honey flatten the whiskey into background sweetness. A high-rye bourbon gives a peppery edge that cuts through the honey, while a wheated one leans soft and dessert-like. Rye whiskey works well too.

Can I use maple syrup instead of honey?

You can, and it makes a different drink worth having. Maple is thinner in the mouth and brings a woody, slightly smoky sweetness that lands close to the bourbon's barrel notes. Use it neat at the same measure, since it already pours at the right consistency.

Is one big cube actually better than several small ones?

For this one, yes. It's a spirit-forward pour, and a single large cube melts slowly enough to keep the drink intact until you're halfway down. Small cubes carry far more surface area and will dilute it noticeably inside ten minutes.
