About the Virgin Sunrise

How the gradient works
Density does all the work. Grenadine is heavy with sugar, so poured slowly down the inside of a full glass it sinks under the orange juice and settles, bleeding upward in a band of red. Thin, watery grenadine will not do it. Neither will pouring from a height, which mixes the two on the way down.
Sausalito usually gets the credit for the tequila version, sometime in the early 1970s, though the name had been attached to an entirely different drink decades before that. What survived was the look rather than the recipe. Take the spirit away and the trick still works, which is why this turns up at every children's party.

Why won't my grenadine sink to the bottom?
It is not dense enough. Real pomegranate syrup is heavy with sugar and drops straight through orange juice, while thin watered-down grenadine just clouds the glass. Pour it slowly down the inside wall over the ice rather than dropping it in from above.
Should the gradient be stirred before drinking?
Only if you want it even. Left alone, the first mouthfuls are pure orange and the last are sweet and almost syrupy from the grenadine sitting at the base. Some people like that arc. One slow stir from the bottom evens it out without wrecking the color.
Carton juice or fresh-squeezed?
Fresh is better, but carton juice is more reliable here. You need the orange sweet rather than sharp, since nothing acidic is coming to balance it, and a decent not-from-concentrate carton is steadier than whatever oranges the shop happened to have this week.
Will it still look right ten minutes after pouring?
The band softens as the ice melts and the layers begin bleeding into one another. It holds for roughly fifteen minutes in a cold glass packed with ice. Pour it last, carry it straight to the table, and it will be seen at its best.
