Why this shape
A coupe with a stepped, flared rim. The step is functional: it is a shelf for salt, and it keeps the salt out of the drink instead of dissolving it into the top centimetre. The wide flare gives you enough rim length that a half-salted rim is actually possible.
Getting it cold
Chill it, then salt it. Salting a wet warm glass gives you a clumped rim.
The usual mistake
Salting the whole rim. Salt half and let the drinker choose which side to sip from — every bar that does this gets asked for it again.
No margarita glass? Use this instead
Use a coupe for an up serve or a rocks glass over ice.
