Why this shape

Volume, mostly. A spritz is ice, wine, bitter liqueur, soda and a slice of fruit, and it needs somewhere to put all of that without becoming a construction problem. The inward curve at the rim also holds aromatics over the surface rather than letting them leave.

Getting it cold

Ice does it. A stemmed glass stays cold on its own because you hold the stem — that is what the stem is for.

The usual mistake

Reaching for a small wine glass. A spritz in a 250ml glass is a spritz with no room for ice, which means a spritz that is warm in four minutes.

No large wine glass? Use this instead

Use a stemless wine glass or roomy tumbler.
