About the Freddy Fudpucker

A joke in the name

Where the name came from is anyone's guess, and the polite explanation, that a bartender called Freddy poured the first one, has the ring of something invented after the fact. What isn't in doubt is the pattern. Through the 1970s bars renamed the Harvey Wallbanger for every base spirit on the back bar, and the tequila version is the only one that stuck.

Should the Galliano be floated or stirred through?

Float it. Pour slowly over the back of a spoon so it sits as a yellow layer, and every sip drags a little vanilla and anise across the orange. Stirred in, it dissolves into the juice and you may as well have skipped it.

I make Harvey Wallbangers. Is this worth pouring a second time?

Same build, different base, and the tequila is doing more than standing in. Vodka lets the Galliano's vanilla and anise sit on plain orange juice; blanco tequila puts pepper and green agave underneath, so the anise reads savory rather than sweet. Whether that's an improvement is taste, but it isn't the same drink.

Can I build a jug of these, or does the float have to go on one glass at a time?

Mix the tequila and juice in a jug by all means; the Galliano has to go on individually. Stirred through a batch it turns into background sweetness, and 8 ml a head is far too little to register that way. Pour the base over ice, then float each one. It takes four seconds.
