About the Trinidad Sour

Bitters promoted to base

Giuseppe González is usually credited with the drink, put together in New York in the late 2000s around the idea that Angostura had spent two centuries as a seasoning and could carry a leading role instead. Bartenders who tried it mostly reported the same sequence: disbelief at the pour, then a second one. Orgeat is what makes it work, and orgeat is the ingredient people skimp on.

Does it honestly call for that much Angostura?

It does. Forty-five milliliters is roughly a quarter of a standard bottle, which feels wrong right up until you taste it. Angostura runs at 44.7 percent alcohol, so this is a full-strength drink, not the novelty the pour makes it look like.

Will another aromatic bitters do the same job?

Not really. Swap in Peychaud’s and you get anise and cherry where the clove and cinnamon should be, and most craft bitters are too gentle to hold a base role. If you’re short, cut the Angostura to 30 ml and add 15 ml more rye.

Nothing else in the drink softens it. Does the orgeat have to be good?

It carries more weight here than in any tiki drink. Almond oil and sugar are the only things blunting 45 ml of bitters, so a thin essence-flavored syrup leaves the glass harsh and hollow. Use one made with real almonds, or make your own and finish it inside two weeks.

What is 15 ml of rye even doing in here?

Holding the floor. Angostura is 44.7 percent but it is also a concentrated seasoning, and with no plain spirit underneath it the drink tastes like a very good marinade. Fifteen milliliters of rye gives the clove and cinnamon something ordinary to sit on. Use one at 45 percent or higher.

What ingredients are in a Trinidad Sour?

A classic Trinidad Sour calls for 45 ml (1.5 oz) Angostura bitters, 22 ml (0.75 oz) Orgeat syrup, 15 ml (0.5 oz) Rye whiskey, 22 ml (0.75 oz) Fresh lemon juice. That single-serve spec scales cleanly — the recipe above converts it to oz and multiplies it for 2–4 drinks.

How strong is a Trinidad Sour?

A standard Trinidad Sour is roughly 26% ABV once mixed (before ice melt softens it further). That makes it spirit-forward — closer to a Martini than to a beer, so sip it slowly.

Is a Trinidad Sour shaken or stirred?

A Trinidad Sour is shaken — the rule of thumb is to shake anything with citrus juice. About 13 seconds with plenty of ice chills and dilutes it correctly.
