About the Brandy Sour

Sours are a ratio

Two parts spirit, one part citrus, three-quarters sugar is the frame under most short drinks worth drinking. Put gin in it and you have a Gin Sour; lengthen that with soda and it's a Collins. This build runs slightly drier than the textbook, 60 to 22 to 15, which suits brandy's own residual sweetness. Learn the ratio once and you can rebuild it in any spirit you own.

Is it worth putting a good VSOP in this?

Not really, and that's the appeal. Lemon and 15 ml of sugar cover the rough edges of a young VS, but they cover the oak and dried fruit of a VSOP just as thoroughly. Where a cheap bottle shows is in the burn rather than the flavor. Taste yours neat first: if it stings, it will sting here too.

Mine is too tart. What should I change?

Push the syrup to 20 ml before you touch the lemon. Lemons vary a lot in acidity across the year, so a fixed recipe drifts with the season. Tasting the mix through a straw before you strain costs five seconds and saves the drink.

Is the Cypriot brandy sour the same thing?

No. The Cyprus version is a long drink: brandy, lemon squash, a few dashes of bitters and soda in a tall glass, with the story usually attaching it to a hotel bar in the Troodos mountains. It's lighter and far less spirit-forward. Don't expect one to taste like the other.

Does the brandy have to be grape?

It does if you want a Brandy Sour rather than something else. Apple and cherry brandies make good drinks, but their fruit argues with the lemon. A basic VS cognac keeps it floral; a Spanish solera brandy pushes it toward raisin and vanilla. Avoid heavily caramel-colored bottles.

What ingredients are in a Brandy Sour?

A classic Brandy Sour calls for 60 ml (2 oz) Brandy, 22 ml (0.75 oz) Fresh lemon juice, 15 ml (0.5 oz) Simple syrup. That single-serve spec scales cleanly — the recipe above converts it to oz and multiplies it for 2–4 drinks.

How strong is a Brandy Sour?

A standard Brandy Sour is roughly 25% ABV once mixed (before ice melt softens it further). That makes it spirit-forward — closer to a Martini than to a beer, so sip it slowly.

Is a Brandy Sour shaken or stirred?

A Brandy Sour is shaken — the rule of thumb is to shake anything with citrus juice. About 13 seconds with plenty of ice chills and dilutes it correctly.
