About the Brandy Fix

Fix, sour or cobbler
Between a sour and a cobbler sits the fix. All three take a spirit, citrus and sugar. A sour gets shaken and strained, a cobbler gets a mound of fruit and crushed ice, and a fix takes the crushed ice without the fruit salad. Nineteenth-century bar guides list all three separately, and the categories mattered to the people writing them.
Maraschino at 4 ml is not there to be tasted as cherry. It carries a nutty, faintly funky stone-fruit smell that meets you before the glass does and makes cheap brandy read as something older than it is. Push it past a bar spoon and it turns the drink into a Fancy Brandy Cocktail instead.

When does the maraschino go in?
Last, over the top of the built drink. Pour the brandy, lemon and syrup over the crushed ice, stir that up from the bottom, then trickle the maraschino across the surface so the first mouthful carries it. Added at the start it just merges with the syrup and you lose the smell.
Do I actually have to stir it, or will the ice sort itself out?
Stir it. Pour everything over the crushed ice, then lift from the bottom with a long spoon for about ten seconds. Skip that and the syrup sits underneath while you drink neat brandy off the top, then hit a sugary inch at the end.
Eight milliliters of sugar against fifteen of lemon sounds thin. Is it?
The maraschino counts as sugar too, so you're really at twelve against fifteen, and crushed ice softens the acid steadily as it melts. If you taste it after stirring and it bites, add a bar spoon more syrup rather than reaching for more maraschino.
The ice is gone before I'm finished. Should I top it up?
Yes, and that's part of the format. Add a handful of fresh crushed ice halfway down and give it another short stir. The drink is designed around continuous dilution. What you want to avoid is starting with too little ice, which makes the whole thing collapse at once.

How strong is a Brandy Fix?
A standard Brandy Fix is roughly 29% ABV once mixed (before ice melt softens it further). That makes it spirit-forward — closer to a Martini than to a beer, so sip it slowly.
Is a Brandy Fix shaken or stirred?
A Brandy Fix is stirred, not shaken. It contains no citrus juice, so stirring keeps it crystal clear and silky instead of cloudy and aerated.
