When vermouth stood alone

Nineteenth-century bar manuals list a Vermouth Cocktail beside the whiskey and gin ones as a matter of course. Harry Johnson gives it ice, bitters and a twist and moves straight on. Vermouth was a fashionable import then, drunk on its own merits rather than used as a modifier for something stronger, and this recipe is a fossil of that habit.

Which bottle of sweet vermouth is worth the money?

Carpano Antica is the loud one, all vanilla and dried fig. Cocchi Storico is lighter and more bitter, which suits this best. Punt e Mes pushes it toward amaro territory. Any of the three beats a supermarket bottle by a wide margin.

Does an opened bottle need refrigerating?

Yes. Vermouth is wine, and it fades on the counter inside a fortnight. Cap it tightly and keep it in the fridge, where it holds for about a month. Buying 375 ml bottles is the cheapest fix if you only drink it occasionally.

Is this just a Manhattan with the whiskey left out?

Close in spirit, different in practice. Without rye there’s nothing to hide behind, so the vermouth’s own bitterness and its sugar are both exposed. It also drinks at around 16 percent rather than 30, which changes when you’d pour one.

What does the lemon twist change?

More than you’d expect. Sweet vermouth is heavy on caramel and dried fruit, and citrus oil cuts across all that, keeping the drink from reading as syrupy. Squeeze the peel over the surface so the oil lands on the drink, then drop it in.
